I love carrot cake. When I was young, I thought it sounded horrible. Who would ever want vegetables in their cake? But one day when I worked at Aetna Life & Casualty in El Paso, a supervisor made a carrot cake for everyone. I decided I would sample it. I could see orange flecks of carrot in the cake and the cream cheese frosting was incredible. The cake itself was moist and flavorful with a lot of spice. I fell in love with that carrot cake! Thank you to Marion who made that delicious cake because it opened up a whole new world of vegetable love and cooking for me!
A carrot cake recipe made from fresh carrots you have grown will have a far superior taste compared to those purchased from a store. There is nothing better than fresh vegetables from your own garden.
Carrot cake makes a wonderful cake for any occasion. Birthdays, anniversaries, graduations, baby showers, wedding showers, fun get-togethers with friends, church socials, work potlucks, even weddings can be the time to make this recipe and share it with all of your friends and family members.
Carrots grow wonderfully for us in the spring and again in the fall out here on the farm. Carrots love to grow in cooler weather. Also, the cooler weather adds a sweetness to the flavor of carrots. There are so many carrot varieties to choose from. If you are interested in trying to grow some carrots, here is where you can order carrot seeds. They all taste good in a made from scratch cake covered with delicious cream cheese frosting!
This cake has raisins, nuts, carrots, and pineapple in it. The amazing thing is that is stays so moist, much better than any box cake mix you might use. My grandmother always made from scratch cakes but my mother only knew how to make cakes from box mixes. For years, I thought that was the only way to make cake. Then I took home economics when I was in seventh grade and I learned how to read recipes and bake from scratch items. Now, I love to bake and it is fun.
For this carrot cake batter, you will need:
First, wash, dry, and grate your carrots until you have 3 cups of grated carrots.
Then grease and flour a 9"x13" rectangular cake pan or spray the pan with Baker's Joy. Preheat your oven to 350 degrees Fahrenheit.
Mix the dry ingredients together--the flour, sugar, baking powder, cinnamon and salt. Add the oil, eggs, pineapple with juice, and vanilla. Beat on low until blended and then on high for approximately two minutes.
Add the carrots, nuts, and/or raisins and stir those into the batter with a wooden spoon. NOTE: The nuts and raisins are optional but make the cake much better.
Pour the batter into the cake pan and bake 45 to 50 minutes or until a toothpick inserted in the middle comes out clean.
Cool and frost with cream cheese frosting below.
Who doesn't love to add cream cheese frosting when they make carrot cake? Yum!
You will need:
Place the softened cream cheese, softened butter, vanilla, and salt in a bowl and cream together using an electric mixer until it is white and fluffy. Add the confectioners sugar while beating on low, one cup at a time, until all of the sugar has been added. Then beat on high until the mixture is fluffy. Spread it on the cooled carrot cake.
