Here is a German pancake recipe that I enjoy making because it uses a lot of eggs, which we happen to have a lot of. It is so tasty. One pancake will serve from four to six people. It cooks up into a large circle or rectangle, depending on what oven proof pan you use to bake it.
When I was a teenager, our family moved from Poughkeepsie, New York to El Paso, Texas and we stayed at the Mesa Inn for three weeks until our new house was ready. While there, we ate a lot of delicious new foods that we had never experienced before. One of the things I had several times was the German pancake. Light and fluffy, it became my new favorite. So here is my favorite German pancake recipe. I hope your family will love it like I do.
Update: Today, Tuesday, February 5, 2024, I watched a new YouTube video of a popular YouTuber making a video for Dutch Baby Pancakes using the exact same recipe so I guess a German Pancake can be called different things. I haven't heard of a Dutch Baby Pancake before. Remember that my video was up way before this one!
You will need:
First, put the four tablespoons of butter (a half of a stick) into the baking pan. Place the pan in the oven and preheat the oven to 425° Fahrenheit.
Place the eggs, milk, vanilla, flour, and salt in a large bowl and whisk it all together until smooth. Feel free to doctor it up with cinnamon and/or nutmeg for a sweet pancake or with savory seasonings if this will be part of your dinner. Experiment with the flavors.
If you add more than six eggs, they will weigh the batter down so it does not fluff up while baking. It will still rise and it will still taste good, but it won't be all puffy and fun.
Pull the hot pan out of the oven with the melted butter. Pour the pancake batter into the baking dish.
Bake for 20 minutes or until golden brown.
Slice and serve with a sweet topping. Some suggestions are listed above. Another way to enjoy this is with berries and cream or with a proper pie filling. This dish will quickly become a family favorite on holidays and on weekends, when you have extra time to be with the family.
